Hot summers require lighter dishes and I decided to try something different. Last year I made a mango radish salsa that was fantastic but I wanted to change things up a bit.

Ingredients:
- 1 full pineapple – diced
- 1 bunch radish – thin sliced
- 1/4 bunch cilantro – roughly chopped
- 1 – 2 jalapenos – minced
- 1 bunch green onion tops – roughly chopped
- 1 lime – juiced
- salt and pepper to taste
Directions:
- Combine all ingredients and refrigerate for at least 30 minutes before serving.

I served this salsa with grilled shrimp and avocado. With a blonde beer or a nice chilled white wine this is the perfect summer recipe.
