One of the things that I love about food blogging is the adventure of finding new recipes to try. I have been trying my hand a quick pickling vegetables lately and decided to try making a batch of jam for when we had visitors recently. What could be better for summer that pineapple jam? This jam turned out a little bit sweeter than I was expecting and it was chunkier than I prefer. I will admit the last part was on me, next time I’ll dice the pineapple into smaller chunks. Overall this recipe is a keeper. The family enjoyed it and it was fairly easy to make.
