A couple of years ago I found a fresh herb cookbook. One of the recipes were these beautiful Chamomile Cakes. A few months ago I started growing chamomile in my herb garden and recently managed to dry enough to make these adorable cakes!

Not only do these have crushed chamomile flowers in the batter, once they come out of the over they are drizzled with a chamomile simple syrup and once they cool the powdered sugar they are dusted with has crushed chamomile mixed in with it.

I had so much fun making these and I was so nervous that they were going to stick in the pan! Thank goodness they didn’t but I did get flour everywhere. These have a delicate floral taste without being too sweet. A perfect desert to split with a friend and enjoy with a nice cup of tea!
