Today’s post is not a recipe because I wasn’t completely happy with how they came out. They did taste good thought!
I actually used the recipe for the cornbread itself that is on the back of the Pioneer Corn Meal bag. However, with the added ingredients I felt that this recipe came out a bit too dry – even on the shortest cook time.
Personally too, I might have gotten distracted and crisped the bacon a bit too much. Next time I make this recipe I’ll add more bacon and probably thicker cut too. And it needs more cheese. This batch had 1/4 cup and I’ll double it next time.
All in all wasn’t completely unhappy with this experiment but it does need some definite tweaking. I made this for meal-prep as a bit of a savory and quick breakfast. They did stay good for three days until we finished them off.
