Food Friday: Couscous Salad


I considered posting something lovey today for Valentines but decided that there are enough red and pink hearts spamming the internet today. Instead you get a new recipe. Keltin and I don’t always manage to eat healthy (possibly because baking is fun and tasty) but I am a firm believer that healthy food can taste amazing.


  • Couscous – seasoned with garlic, salt, and pepper
  • Sweet Potatoes
  • Fresh Mint Leaves
  • Mico-Greens


  1. Dice the sweet potatoes, season and roast them for 30 minutes at 425°F
  2. When the potatoes have about 10 minutes remaining prepare the couscous according to package directions.
  3. When the potatoes and couscous are both ready combine in a large bowl with the mint and micro-greens. Mix well and serve.

This is a simple and tasty recipe, easy for a weeknight dinner! Happy Friday!
