Foodie Friday: Homemade Granola

If you can’t tell from this blog I really enjoy making things from scratch and I did a lot of baking and prepping last weekend. In addition to making more pickles (some are spicy this batch) and banana bread I decided to try my hand at making granola. This is a fruit and nut granola that will get you in the mood for for fall and is perfect paired with a flavorful Greek yogurt – we’ve been enjoying it with strawberry.

Ingredients:

  • 1/2 C. Butter
  • 1/4 C. Brown Sugar
  • 2 Tbs. Sugar
  • 1 Tsp. Vanilla
  • 1/4 C. Honey
  • 2 C. Old Fashioned oats
  • 1/2 C. Dried Apricots
  • 1/4 C. Pumpkin Seeds
  • 1/2 C. Whole Almonds
  • 1 C. Chopped Pecans
  • 3/4 Tsp. Salt
  • 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Nutmeg
  • 1/8 Tsp. Red Pepper (if desired)
  • 1/2 C. Dried Cranberries

Directions:

  1. Heat over to 275℉
  2. Combine butter, honey, sugars, and vanilla in an oven safe skillet (I used cast iron) over medium heat until everything is melted.
  3. Remove from heat and add the oats, almonds, pecans, dried apricots, pumpkin seeds, salt, cinnamon, nutmeg, and red pepper.
  4. Stir everything together until all the dry ingredients are coated in the honey-butter mix.
  5. Place in the over for 55 minutes, stirring occasionally. Once the timer goes off, stir in the cranberries. Let the granola sit and continue to cool. It will dry as it cools
  6. Enjoy with yogurt, milk or on top of a smoothie.
