Keltin picked us up a new cook book and this one is specifically for camp cooking: The New Camp Cookbook: Gourmet Grub for Campers, Road Trippers, and Adventurers. I immediately found a recipe that I wanted to try: Blueberry Skillet Scones with Lemon Glaze. We were going camping the next weekend but I decided to test these out before hand at home on the stove.

These were super easy to make and I did my best to make them with the limited tools that I would have while campfire cooking. I could not fit as many scones in the pan as the recipe said but doing two batches was super easy. I also added a bit more lemon juice to the glaze then it called for but I like the tart. This book also has compound butter recipes and we paired these scones with the honey-cinnamon butter and they were delicious.

These scones turned out well! This recipes makes a fairly large batch and it is prefect for a larger group breakfast or to have some scones as breakfast and other on the trail as a sweet snack! Happy baking and hiking!
