Recipe: Dirty Chai Meringues

A dirty chai is typically a chai tea latte with a shot of espresso. I let that drink inspire this dessert. I love the King Arthur Baking Espresso Meringue recipe; I’ve made it several times and these are always delicious. I used that recipe as this base for this updated version. For Christmas I was gifted some Chai Sugar, with it I made Chai Whipped Cream that I served on top of the Espresso Meringues.

I want to give you all an actual recipe for this Chai Whipped Cream but I have a problem – I measure things with my heart… so all you get is a rough draft.

Recipes

Espresso Meringue

  • Castor Sugar (Superfine Sugar)
  • Espresso Powder
  • Egg Whites
  • Cream of Tartar
  • Dash of Salt

Chai Whipped Cream

All measurements are approximate… Feel free to add more sugar if this version is not sweet enough for you.

  • 1 C. Heavy Whipping Cream
  • Dash of Salt
  • 2-3 Tbs. Chai Sugar

Directions

  1. Combine all ingredients in a stand mixer with whisk attachment.
  2. Whisk to stiff peaks
  3. Serve on top of Espresso Meringue

Note: This Chai Whipped Cream is really good on top of coffee as well!

I’m very much still working in my piping skills so these aren’t very pretty. That being said, they taste like fall. Despite the amount of sugar these aren’t a super sweet dessert.
